Brandy & Cognac
You can make Brandy from any fermented fruit juice, but you'll find most is made from grapes. To be called Cognac a brandy must be produced from particular grapes in the Cognac region. And if you're wondering what all those letters mean, they tell you how long your brandy has rested in wooden casks, picking up all sorts of lovely depth of flavour; V.S (Very Special) - the youngest in the range, minimum aging of 2 years through to XO where the youngest brandy in the blend needs to be at least 10 years old and the creme de la creme Hors d'age - truly superior gems that are off the age scale.
